Our love of chocolate was sparked by an article in a newspaper discussing the production of chocolate bars by smaller producers. Lots of big volume producers buy cocoa (often in liquid form) on the open market and so have little say in how it is produced. What differentiates the bars below from others on the market is that they are "bean to bar". They have total control and traceability over their ingredients and the growers are given a fair price. These showcase what can be achieved when care is taken over the end result. Just like wine and the concept of "terroir", cocoa too has the ability to reflect its environment and growing conditions with sometimes astonishing results.
