With a strong aroma of liquorice and black fruit, this bar delivers on all fronts. Fruity with good acidity and a floral Jasmine yet bitter coffee finish that just keeps evolving. The texture is phenomenal and almost moussey. BOOM! It's somewhat like knocking back a triple ristretto... 10 minutes later and your senses are still being assaulted. Pralus has used Trinitario beans which have been roasted to their limit. Any more and it would be too much. As counter intuitive as it may seem (although the 100% is made with Criollo beans), the 100% bar is lighter and possibly easier to eat than this. If you are after "extreme" chocolate, this is the one for you.
